Creamed Spinach (Karen Holley)
Saute 4 green onions in 2 tbsp butter

Add 2 lbs spinach, 1 handful at a time until all are wilted

Use a colander to squeeze out all liquid

Optional: Saute 2 cloves garlic in the pan in 2 tbsp butter

In the same pan add 1 cup heavy cream and 1/2 tsp of nutmeg and thicken for about 5 min

Add the spinach and stir for about 3 min

Remove from heat and stir in 1 cup any combination of Italian cheeses

Salt and Pepper to taste

Cranberry-Jalapeno Relish (Dave & Dayleen)
12 oz package fresh cranberries

1 whole lime

3/4 cups sugar

2+ Jalapenopeppers, seeded and minced

1/4 cup chopped fresh cilantro

Place cranberries in food processor, process until coarsely chopped and transfer to bowl

Zest one lime and add juice of lime to mix

Add cranberries along with sugar and minced jalapeno, mix in cilantro

Refrigerate relish for several hours to allow flavors to mellow and blend

Serve chilled

Mexican Casserole Relish (Karen Holley)

1 lb Ground Beef

1/2 Chopped Onion

1/2 tsp Garlic Salt or Powder

16 oz Tomato Sauce

1 cup Sour Cream

1 cup Cottage Cheese

1 can of Diced Green Chilies (4 oz)

1 cup Grated Jack Cheese

6 1/2 oz or more Tortilla Chips

 

Mix ground beef, onion and garlic salt or powder and brown.  Add tomato sauce and simmer 5 minutes.  In a bowl mix together the sour cream, cottage cheese and the diced chilies.

Butter a casserole dish and place chips on the bottom (I kind of smash them a bit.). Then add a layer of the meat sauce and a layer of the sour cream mixture (I usually throw in some of the grated jack cheese at each layer thus I use more than one cup per recipe). Then a layer of chips and continue until all ingredients are used.  Make sure that the top layer is chips with cheese on top.

Bake at 350 degrees for 30-35 minutes.

Noodle Kugel (Juanita Kay)

 

1 lb Extra Wide Egg Noodles

1 pt Cottage Cheese 

7 Eggs

1 up Golden Raisins 

1 cup Sugar

1-1/2 tsp Vanilla 

3 cups Milk

1 cup Golden Raisins

1 pt Sour Cream

1/4 lb Butter (plus more for dotting)

 

Topping

1-1/2 cups Crumbled Corn Flakes

1-1/2 tsp Sugar

1-1/2 tsp Cinnamon

 

1. Cook noodles according to package direction. Drain and place in extra large bowl. Add butter And stir into noodles.

2. Beat eggs.  Add all other ingredients and mix well. Pour over noodles and combine.

3. Pour into greased pan, cover and refrigerate overnight.

4. Mix topping and sprinkle over kugel before baking.  Dot with butter and bake at 350 degrees uncovered for 1-1/2 hours.
